Ikegawa opened “Torishiki” in 2007 after his apprenticeship. Before becoming a chef, he had worked as a “salaryman.”
As time passed, the number of chefs and restaurants that inherited his spirit increased. And “Torishiki ICHIMON” was established in 2023, in order to further develop Yakitori culture.
